What is karari roti?
Karari roti is a very crispy rumali roti which is served in many restaurants in India as a starter or appetizer. This is a very crispy roti recipe which is like papad and can be consumed without any side dish. This roti looks like a roti tokri with spices. This is a restaurant style karari roti so I made this roti on a homemade tandoor. I use a aluminium kadai to make this crispy karari roti.
How to make karari roti recipe?
To make this roti I make tandoor at home by placing an aluminium kadai or any deep round bottom vessel upside down on a stove. Then I place the prepared rumali roti on it and cook it until it becomes crispy. This roti is also known as restaurant style karari roti.

Karari roti recipe - Crispy roti
karari roti or crispy roti is a starter or appetizer which is served in restaurants.

Equipment
- Aluminium kadai
Ingredients
- 2 cups all purpose flour maida or plain flour
- 1/2 cup whole wheat flour atta
- 1 tsp salt
- 1 tbsp oil sunflower oil
- water for kneading
- 4 tbsp salted water
- 2 tbsp butter melted
- 1 tsp chilli powder
- 1 tsp chat masala or amchoor powder
- coriander leaves for garnishing
Instructions
- Add all purpose flour, whole wheat flour, oil and salt in a bowl. Add water to prepare a soft dough.
- Cover the dough and leave it for 10 minutes.
- After 10 minutes, knead the dough for few seconds.
- Now divide the dough in 6-7 equal parts.
- Take a portion and make a ball.
- Now add flour to it and roll it thin using a rolling pin.
- Take the roti in your hands and use the knuckles to stretch it. Do this process gently.
- Repeat this process until it becomes very thin.
- Now take an aluminium kadai or any large round vessel and place it on the stove upside down. Heat it for 5 minutes on medium heat.
- Sprinkle salted water on this kadai so that the roti does not stick to it.
- Now place the prepared thin roti on it and let it cook on low medium heat for 30 seconds.
- Use a tong to loosen the sides of the roti.
- Cook the roti by pressing it using a paper towel or a cloth.
- Take out the roti gently when it becomes crispy.
- Repeat the process and prepare all the roti.
- Take melted butter and add chilli powder and chat masala to it. Mix it well.
- Apply this mixture on the karari roti. Add chopped coriander on it. Karari roti is ready.
