What is Ghee Mysore pak?
Ghee Mysore pak is an authentic Indian dish prepared with ghee, besan/gram flour and sugar as the main ingredient. It is very popular south Indian dessert recipe from Mysore district of Karnataka state. Delicious Mysore Pak also has very funny history of preparing it, It was originally prepared during the period of The maharaja or king of Mysore, Krishnaraja Wodeyar. His chef Kakasura Madappa was the actual founder and and named it as Mysore pak when asked. You can also refer history if you want more details about it.
Variations of mysore pak
Mysore Pak has two variations – one is soft mysore pak and other is little hard. In this recipe I have prepared soft mysore pak. The only difference between those is the texture. To get the soft consistency the amount of sugar and water to make sugar syrup is more in the hard mysore pak, also the ghee should be hot when you make hard mysore pak. Although the ingredients are almost same but it is also prepared quite differently in the states like Tamil nadu, Andhra Pradesh and Telngana. In few places it is also served as hot fudge. But you can always try your own variation. Experiment with it but be careful so that you don’t spoil the whole sweet.
How to make ghee mysore pak?
Though the preparation may take some time but it is also easy to prepare. First make the sugar syrup by melting the sugar and water. The sugar syrup must have one string consistency. After that add sifted besan or gram flour and mix it well, you have to add ghee gradually and mix it. Once it has achieved the mysore pak texture let it set for some time. You must give it a try as it is super yummy and delicious. - 1 cup besan/gram flour
- 1 1/4 cup sugar
- 1/4 cup water
- 1 cup ghee
Instructions
- To prepare ghee mysoe pak first sieve the besan and add it to the bowl
- now add sugar and water in a pan
- heat it until one string consistency
- add the besan and mix it well
- add ghee gradually and mix continuously
- transfer it to a container
- spread it evenly and make it smooth
- let it set for 30 minutes
- loosen the edges and cut it
