In bengal people eat mishti doi with rice but in North India people like to eat it as a dessert.

mishti dahi will lasts upto 1 week if kept in refrigerator.
Important tips-
- to make mishti doi more thick you can also add milk powder to it
- people also add condensed milk in place of sugar in mishti doi for the thickness and colour.
- you can replace sugar with jaggery in mishti doi.
- you can also place the container in warm place in place of keeping it on the gas or stove.

mishti doi - mishti dahi
Ingredients
- 1 1/4 cup sugar
- 4 tbsp water
- 1 1/2 litre milk
- 1 1/2 cup hung curd
Instructions
- first take a 1/2 cup of sugar and 4 tbsp of water, boil it until it caramelises and turns brown
- add 1/2 cup of milk and mix it well until no lumps formed
- add 1 1/2 litre of milk, mix it well and let it boil for 15 minutes
- add 3/4 cup of sugar, mix well and let it cool
- now take 1 1/2 cup of hung curd and whisk it for few minutes
- now add the lukewarm milk to it and mix it well
- take a clay pot, pour the mixture to it.
- cover it with aluminium foil and wrap it with the towel
- place it in a big vessel and close the lid
- keep it in the lowest heat for 2 hours
- turn off the heat and let it cool
- take it out and your mishti doi is ready
Mishti doi recipe with step-by-step with photos-
- First add 1/2 cup of sugar and 4 Tbsp water and boil it.
- caramelise it until it turns dark brown.
- add 1/2 cup of milk and mix it well.
- keep stirring until no lumps are formed
- now add 1 1/2 litre of milk, mix it well and let it boil for 15 minutes.
- add 3/4 cup of sugar, mix well and let it cool.
- take 1 1/2 cup of hung curd and whisk it for few minutes
- add the lukewarm milk and mix it well
- pour the mixture into a clay pot
- cover it with aluminium foil.
- wrap it with the towel
- place it in a big vessel and close the lid
- keep it in the lowest heat for 2 hours
- take it out and remove covered towel and aluminium foil.
- your mishti doi is ready
