Tomato soup is the most common soup that every indian restaurant serves. This soup is very healthy and full of vitamins. It provides good amount of fibres and its high in vitamin A, C and K. Tomato soup is also good if you want to lose weight. People in low carb and keto diet should eat tomato soup since its low in carbs and high in fibres.
Most restaurants use cornstarch or cornflour to thicken the soup. But in this recipe I have used rice to thicken it up. You can use cornflour as well.

tomato soup
Servings: 2 people
Ingredients
- 1 1/2 tbsp butter
- 1 bay leaf
- 5-6 peppercorns
- 1 tsp ginger
- 1 tsp garlic
- 1 small onion
- 70 gram carrot
- 500 gram tomatoes
- 2 tbsp rice
- 1 1/2 cup water
- 1 cup water
- 2 tsp salt
- 2 tsp sugar
- 1/3 tsp chilli powder
- fresh cream
- coriander leaves
- pepper powder
Instructions
- To prepare tomato soup first add, butter, bay leaf, pepper corns, ginger, garlic and fry till golden brown
- now add onion and fry it for 3 minutes
- add carrot, tomatoes, and rice and mix it well
- add water, mix it and close the lid
- cook for 2 whistles on medium heat
- blend it smooth using a hand blender or you can also blend it in grinder after cooling it completely
- strain it and add it to a pan
- add water, salt, chilli powder, sugar and mix it well
- boil it for few minutes
- garnish it with fresh cream, pepper powder and coriander leaves
